The reason for jerky gameplay and choppy sound is the fact that when you burn the files yourself they do not get the position they are supposed to have, meaning more searching on the disc while it is being used.
There are ways to first make a file that contains info about how the files are arranged on the original disc and after that patch that into the iso before burning. Can't remember where though...

Conker will fit on a DVD5 if you remove files like dashupdate.xbe and similar. If the version is multilanguage remove all but the one you are interested in and so on.
Jade Empire is a harder one, but you can downsample the videos on the disc by using RADGameTools... Thats a process that takes a lot of time (about 2 days)...

Interesting and slighty of topic here:

I've backed up Halo 2 and Rallysport Challange 2 on DVD9. I get as far as the intro on both games, then a black screen.

i use high quality media too so its not that. Wonder if a Patcher is required for DL games like the Toxic Patcher for PS2 because of the OTP and PTP differences on a original dvd9 and a copy. Also, DL checks that the games have.

Most likely (my own theory btw) is the breakpoint between layers on your backup not the same as the original. Therefore it jumps to the next layer and finds nothing... or something... ahh I don't know... :P

Anyway Halo2 can easily be fitten onto a standard DVD5 by removing dashupdate, replacing attractions.bik with a dummyfile and some more file I don't remember for the moment... Simple!
Rallisport Challenge 2 is tougher, but I've played it from my HDD and that works fine...

The guy game has to be split into two discs....I believe it was covered here a while back.....You copy half of the game onto one and the rest onto another with a little overlap or something.....I can not find the post though.......HTH
