There are actually not a huge amount of resources on the Nintendo64. However depending on what you want to extract you can Likely accomplish it for most games.

Some N64 Roms contain compressed Audio Video Etc. This will likely bring a road block to most efforts or extraction.

Most Audio Files have already been extracted and Decompressed for Popular games. These files can be played back via WinAmp with a plugin. ( High Sys requirements for quality as this plugin is built off an Emulator's Sound Engine)

Textures can be extracted via the Yet unreleased Project64 1.7 with a new version of the Video Plugin. These texture have been modded to increase thier quality and then reinjected into the Rom to produce a better quality texture game! Like I said this is still a Beta so you will have to wait on this one, but take my word for it, it is a very neat function. Imagine Zelda OoT with Gamecube quality (certain textures).

I would say the best place to start fiddling around with Roms if your new to them is Zophar.net. Check out the N64 Rom tools there and I'll keep you posted on 1.7 Beta for PJ64.

You can likely download the TExture packs at PJ64.net I believe those are public. Good Luck Shoot me any Questions.

Textures are pretty much what I want to extract. Thanks so much for the info. I'll wait for the 1.7 version of PJ64.
