Jak 3 works if you hexedit the SLUS (Or whatever region your game is). I'll try to find the info, I have it here somewhere....

There is a patch for the NTSC release though. Here: Jak 3 NTSC Fix

Use PPF patcher to patch iso. (To make iso, use dvd decrypter or something of the sort (Isobuster, etc)

EDIT:
For the PAL version, patch offset 0x3ba0 of SCES_524.60 from 0c 00 40 04 to 13 00 00 10 then enable mode 3.

For the NTSC version, patch SCUS_973.30 at offset 00003bb0 to 13 00 00 10 then enable mode 3.

Use a Hexeditor then inject/update with Apache 2 or by other means (Recompile DVD/etc).
